Tips

  1. Soak Soya Granules Thoroughly: Ensure that the soy granules are soaked well in hot water until soft to achieve a pleasant texture in the dish.
  2. Pre-cook Cauliflower: Pre-cooking the cauliflower until it's 90% done helps maintain its texture and prevents it from becoming mushy during the final cooking stage.
  3. Use a Cast Iron Skillet: Cooking in a cast iron skillet enhances the flavors and provides even heat distribution, resulting in a deliciously cooked dish.
  4. Deglaze the Pan: Deglazing the skillet with water helps incorporate any flavorful bits stuck to the bottom, enhancing the overall taste of the dish.
  5. Adjust Spices to Taste: Taste the dish as you go and adjust the spices, salt, and other seasonings according to your preference for a perfectly balanced flavor profile.
  6. Make Ahead: Prepare the bhuna masala in advance and store it in the refrigerator for up to a week, making it easier to whip up this dish on busy days.
  7. Customize Veggies: Feel free to add or substitute other vegetables like bell peppers, carrots, or potatoes to suit your taste and preference.
  8. Consistency Control: Adjust the water quantity based on your preferred consistency. If you prefer a thicker gravy, use less water.
  9. Meal Prep: This dish reheats well, making it a great candidate for meal prepping. Cook a larger batch and store leftovers for quick and convenient meals throughout the week.
  10. Serve with Accompaniments: Consider serving the dish with a side of pickles, chutney, or raita for added depth of flavor.
