This baked ratatouille recipe is a fun and colorful side dish recipe that is inspired by a Disney classic. Has anyone seen the movie?

This movie is near and dear to my heart. When I watched it with my son, years and years ago, it sparked his interest in cooking. From that moment on, he was thrilled to be included in the kitchen.

It seemed like a no-brainer to make this simple side dish recipe.

Ratatouille Side Dish

Homemade ratatouille ingredients

  • Tomato sauce
  • Onion
  • Garden Garlic Paste
  • Eggplant
  • Zucchini
  • Yellow squash
  • Red pepper
  • Yellow pepper
  • Olive oil
  • Parmesan cheese

We like to used garlic paste for this recipe, however you could substitute that with minced garlic if needed.

How to make Ratatouille:

  1. Preheat your oven to 375 degrees.
  2. Stir together your onion, garlic paste, and tomato sauce. Spread into the bottom of a 9 inch pan.
  3. Line all of your chopped veggies in your dish. I started on the outer edge and worked my way in. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Cover your veggies with a piece of parchment paper slid just inside your baking dish. Bake for 30-45 minutes, or until your veggies are tender. Sprinkle with cheese and serve.

Recipe tip: Use a mandolin to help slice the vegetables evenly. The other option is a sharp knife. Try to keep the vegetables the same thickness.

Ingredients

  • 1/2 (8 oz) can of tomato sauce
  • 1/2 onion chopped
  • 2 teaspoon Gourmet Garden chunky garlic paste
  • 1 small eggplant sliced
  • 1 small zucchini sliced
  • 1 small yellow squash sliced
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 4 tablespoons olive oil
  • 1/4 cup fresh grated Parmesan cheese
  • salt and pepper to taste

    Credit where credit is due please! Thomas Keller served as consultant(so much as having producers briefly stagiare at French Laundry) and created this dish based on a slightly older dish he had made. I love this movie, but I think if you’re going to talk about this Thomas Keller dish, you should mention him!
