With only three ingredients and a little skill, you can make this flatbread. This recipe is much easier but just as delicious as roti with dahl filling. If you have never made flatbread roti before this might be a good version to start with. So, are you ready to learn how to make potato roti? Let’s get started!

What You Need For This Recipe

If you want to make potato roti you only need to have the following ingredients. Have them ready when you start:

  • Potatoes – I like to use a starchy potato like a russet or a yuka gold potato. Potatoes with a lot of starch have a crumbly texture which absorbs flour well. This results in an elastic dough which is what you want with roti
  • Flour – you can use all-purpose flour or make it with whole wheat flour. Whole wheat flour dough is tougher compared to dough made with all-purpose flour
  • Oil – you need oil for brushing the flatbreads when you are cooking them
  • Salt – this is optional you can add salt if you like but I haven’t and I didn’t miss it

How To Make Potato Roti

  1. To make this recipe start by peeling a starchy potato and dicing it into small pieces to speed up the cooking process.
  2. Cook the potatoes in boiling water. This takes about 12 to 15 minutes. Instead of boiling potatoes on the stove, you can also boil potatoes in an Instant Pot. This takes approximately 10 minutes.
  3. Drain the potatoes and put them in a big bowl. Now you can mash the potatoes with a fork or a potato masher. If you want to add salt you can add it now and stir it through the potatoes.
  4. Once the potatoes are mashed add 1 cup of flour. Stir the flour through the potatoes with the fork until the flour and potatoes are combined.
  5. Then add another ½ cup of flour and again stir it through as well. With the final ½ cup of flour knead the dough by hand until you have a consistent and elastic dough.
  6. Take the dough out of the bowl and knead the dough for a couple of minutes on a cutting board or the kitchen counter.

  7. You can use this dough straight away if you want but some rest time is recommended. When you want to rest the dough brush it with vegetable oil and wrap the bowl with tin foil for 15 minutes.
  8. Push the dough flat and cut it into 8 equal-sized wedges.
  9. Take one piece of dough and roll it into a ball, press down on a floured board, and roll it into a flatbread using a rolling pin. Preheat a cast-iron skillet to medium-hot before adding the flatbread. You do not need to add oil or butter to the skillet.
  10. Dry cook the flatbread for 30 seconds, then flip and cook the other side for 30 seconds. Flip again until you see brown patches.
  11. Take the roti potato flatbreads out of the pan and keep them warm underneath a clean kitchen towel. This recipe yields about 8 roti flatbreads.

Easy Flatbread Recipe

I have this very old Surinam cookbook. It doesn’t contain any images at all. Can you imagine? The book contains a large number of recipes.

Of course, one of the recipes is the potato roti. Roti recipes are amazing just take a look at my father’s rustic roti with chicken which uses the roti as cutlery so you can eat it with your hands.

What is great about this flatbread recipe is that you only need three ingredients, that everybody has in their pantry.

I only know how to use these flatbreads for savory dishes but in Norway, they make potato flatbreads and add heavy cream, butter, and sugar to the ingredients to turn them into sweet potato lefse.

So, a very similar recipe but not used the same way.

Yes, these flatbreads are perfect to make in a big batch for meal prep and store to use for later. You have several options to store and reheat.

So, no worries if you have leftover flatbread or made a big batch.

How To Store Potato Roti

You have several ways to store flatbread. In all cases let them cool completely before storing them:

  • Room temperature – you can store these flatbreads at room temperature when you plan on using them within a day or two. Put them in an airtight food container or a Ziploc bag
  • Refrigerator – when you want to use them within a week you can store them in the fridge. Store them in a Ziploc bag or a food container
  • Freezer – if you want to store them longer you can use my preferred way to store flatbread that is in the freezer. Put the flatbreads in a freezer-friendly container or a food bag for up to 3 months

How To Reheat Potato Roti Flatbread

You have several ways to reheat potato flatbreads:

  • Cast-iron skillet – as you made the flatbread in a cast-iron skillet you can also reheat them in a skillet. Preheat the skillet to medium and dry cook the flatbreads for 30 seconds on both sides or until warm. Wrap in a clean kitchen towel
  • Oven – you can also reheat the flatbreads in the oven. Preheat the oven to 375℉/190℃ and wrap the flatbreads in aluminum foil and heat for 5-7 minutes or until warm
  • Air Fryer – preheat the Air Fryer to 350℉/175℃ for 3 minutes. Wrap the flatbreads in aluminum foil and heat for 3-4 minutes or until warm
  • Microwave – you can also reheat the flatbreads in the microwave. Wrap in clingfilm and heat for 60 to 90 seconds or until warm

Serves: 7 Prep Time: 80 minutes Cooking Time: 15 minutes

Potato roti is great if you never made roti before. Just 3 ingredients. Great to serve with curry or Surinam chicken.

Ingredients

  • 4 large potatoes (approx 600 grams)
  • 2 cups of flour (all-purpose or wheat flour)
  • 1 tablespoon of vegetable oil (for brushing the dough)
  • ½ teaspoon salt (optional)

Instructions

  1. Peel, dice, and boil the potatoes until soft
  2. Drain and mash the potatoes. If you want use salt add it now and stir it through the mashed potatoes
  3. Add 1 cup of flour and stir through the potatoes with a fork
  4. Add another ½ cup of flour and combine thoroughly
  5. Put dough on a floured surface and add the last ½ cup of flour and knead the dough by hand until elastic
  6. If you have time put it in a bowl and brush with oil before wrapping with cling film and let it rest for 15 minutes
  7. Knead the dough one more time before cutting it into 8 equal-sized wedges
  8. Heat a skillet before taking the dough out of the bowl
  9. Roll the dough into a potato flatbread and dry bake it in the hot skillet (no oil). Flip and bake the other side
  10. Take out of the pan and keep warm in a clean kitchen towel
