Brrrr! It’s starting to get chilly around here. I broke out my hot water bottle the other night because my feet couldn’t get warm under the covers. You know what that means? This soup is the best ever! I’ve made it at least 8 times in the last 2 years, using low sodium chicken broth and cremini mushrooms (because we love them). I typically use 2 10 ounce packages of creminis and 8 dried shiitakes because that’s what comes in the package. I also trim the stems on them. I freeze 2 quarts so there’s always some in the freezer and it thickens up so much that I get 3 large bowls from each quart with the extra stock I add. My husband and I both love it! Currently on the east coast! Arriving in NY tomorrow to 37 degrees, which I think is rather chilly. But for this California girl, anything below 55 is considered soup weather. 😉

These soups sound delicious Tory. I particularly appreciate your continuous inclusion of foods from oft-overlooked Jewish populations — in this case the Yemenites. I wish others would do the same.

I just ate, but these are making me hungry! Will have to give several a try. One question though: A grilled cheese sandwich would not be kosher with the beef hot pot, right?

Wendell kosher cooks do not mix dairy and meat, you are correct. 🙂 Most of my readers don’t keep kosher, but if you’re worried about that then stick to the vegetarian soups… or skip the grilled cheese! 🙂
