This Almond Butter Granola is one of my favorite weekday breakfast foods. It has almond butter, honey (or maple syrup) warming cinnamon, coconut, and dried fruit for a tasty breakfast that everyone will love.

I love making homemade almond butter, so I thought to use it in granola similarly to my peanut butter granola recipe.

It came out wonderfully with just the right amount and size of granola clusters versus loose crunchy oats. I made this a cinnamon raisin version and the addition of coconut (I used shredded) rounded out the flavor profile perfectly.

But of course, as with any granola, there is playroom to adjust for your taste preferences by adding different dried fruit or nuts. Remember this Tropical Granola where I added candied pineapple pieces?

Ingredients (& Substitutions)

  • almond butter - or other nut or seed butter
  • coconut oil
  • honey- or maple syrup
  • vanilla extract
  • oats- rolled oats or quick cooking; use certified gluten free oats for gluten free granola
  • cinnamon
  • shredded coconut
  • raisins- or other dried fruit or nuts

Instructions

  1. Preheat the oven and line a baking sheet/
  2. Mix the wet ingredients in a large bowl. Microwave for 30 seconds or until the almond butter is lightly melted.
  3. Stir until smooth, then add in remaining ingredients aside from raisins.
  4. Spread onto the baking sheet and bake for 10 minutes. Stir in the raisins while flipping the granola. Continue baking the granola for another 10 minutes.
  5. Allow the granola to cool before you store it in an airtight container.

Hint: It is important that you add the raisins halfway during baking rather than at the beginning to ensure they don't dry out or burn.

Serving Suggestions

While you can easily eat this granola by the handful as a snack, for a quick breakfast, you can also add it to cold milk or sprinkle it over yogurt with some fresh fruit. Here are some other ideas regarding how you can serve granola:

  • Make a granola yogurt parfait: Simply layer the granola with dairy or coconut yogurt, fruit, and maple syrup or honey for a luxurious breakfast that is also healthy.
  • Serve it on a smoothie bowl: Place some of the granola on top of your favourite smoothie bowl recipe along with other garnishes like berries, sliced banana, sliced peaches, and more.
  • Use it as a garnish on cheesecake: If you would like to add some crunch to your cheesecake with the addition of fiber, consider garnishing it with some of this granola. The granola would be particularly good on a yogurt cheesecake with some fresh berries and a drizzle of honey.

Variations

This almond butter granola recipe is wonderful as it is with the nutty taste of the almond butter and sweet, rich flavour of the raisins. However, if you would like to change it up, you definitely can. Here are some ways you can adjust this recipe according to your tastes and what you have on hand.

  • Make a cherry white chocolate granola: To make this version, you can make the recipe as it is, but replace the raisins with dried cherries, and stir chopped white chocolate or chocolate chips into the granola at the end once it has cooled.
  • Make a pistachio apricot granola: Simply add shelled pistachios and chopped dried apricots into the granola at the stage where you would add the raisins. The green and orange of the pistachios and apricots will add extra visual appeal to your homemade granola.

Storage

To store this coconut almond butter granola, simply wait for it to cool before putting it in an airtight container or sealable freezer bag. The granola should stay fresh for 1 to 2 months at room temperature if you keep it in a dark place. However, for longer storage, you can place it in the freezer as well.

Top Tip

Make sure you turn the granola over halfway during cooking to ensure it bakes evenly. You will know it is fully baked once it is consistently dry and a golden colour.

Ingredients

  • ¼ cup almond butter
  • 1 tablespoon coconut oil
  • 3 tablespoons honey or maple syrup
  • ½ teaspoon vanilla extract
  • 2 cups oats old-fashioned or quick cooking, just not instant
  • ½ teaspoon cinnamon
  • ¼ cup unsweetened shredded coconut
  • ¼ cup raisins or other dried fruit, nuts

Instructions

  • Preheat your oven to 325°F/160°C. Line a baking sheet with parchment paper or silicon baking mat like Silpat.

  • In a medium-large microwave safe mixing bowl, combine the almond butter, coconut oil, and honey. Microwave for about 30 seconds, until the almond butter is slightly melted. Stir until smooth. Add the vanilla, cinnamon, shredded coconut and oats and stir until everything is combined.

  • Spread the mixture onto the prepared baking sheet. Bake for 10 minutes, remove from the oven and stir in the raisins while turning/flipping the granola. Bake an additional 10 minutes.

  • Allow the granola to cool before transferring to a storage container.
